The judges and producers admitted that they are allowing the contestants re-plate the dishes when the camera stop rolling. OMG since this is public secret and everyone knows this kind of thing, but still i can't believe they outburst the secret to their audience. well well

I would go further and say that the contestant were preselected before the audition. Also none had not a clue about cooking but were rather aspirant actor, therefor they were more at easy with the cameras.
